Chicken breast is a lean source of complete protein and offers many micronutrients, including choline and B vitamins. It fits wonderfully into healthy eating patterns, including the Mediterranean diet. And because it’s low in saturated fat, it’s a great protein for people with heart disease or diabetes.

Typically, chicken salad is good for three or four days in an airtight container in the refrigerator. If you see it change color, it’s always best to throw it away.

Materials:

  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 2 teaspoons of lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped mixed fresh herbs (such as tarragon, dill  and/or  chives)
  • 3 cups cooked chicken breast, coarsely chopped 
  • 1/2 cup celery, chopped 
  • 1/4 cup chopped onion

Implementation:

Whisk together the mayonnaise, yogurt, lemon juice, mustard, paprika, garlic powder, salt, and pepper in a large bowl until well blended. Add the herbs. Then add the chicken, celery and onion, stir until evenly coated and it’s ready!
